Douglas Baker: clever but saying it is different than execution on so many levels not the least of which is consumer taste rationale and the whole side of issues regarding food - I'm fairly certain that the many producers of cream cheese have thought of this and determined 'no go' reasoning so they are not a market for you. If direct to consumer, think about the many challenges there which include money, time, regulations, production, distribution, and competition.
